Pomegranate & Coconut Chia Pudding
Ingredients for the chia pudding:
1/4 cup chia seeds
2 tablespoons desiccated coconut
1 tablespoon coconut yoghurt
1/2 cup coconut water
2 tablespoons pomegranate juice
3/4 cup coconut milk
Ingredients for the toppings:
1/2 cup pomegranate seeds
1/4 cup coconut yoghurt
1/4 cup granola
Method1. Mix all the chia pudding ingredients together in a medium bowl.
2. Set the bowl in the fridge for at least 2 hours (I ended up doing it overnight as I love thick chia puddings!)
3. Once the chia pudding is set to your desired consistency, using a jar or container, start stacking up the chia pudding with the toppings.
4. Dig in and enjoy immediately or make ahead for meal prep - this can last in the fridge for up to 4 days!
