Recipe: Pomegranate & Chickpea Salad

Pomegranate & Chickpea Salad

Ingredients

1 cup (or 450g can) chickpeas
1/2 a red onion chopped
1/2 cup chopped cucumber
1/2 cup coriander chopped
2 tablespoons olive oil or hemp oil
1 tablespoon lemon juice
1/2 cup of pomegranate seeds/arils
Salt & pepper to your desired taste

Method

Simply add all your ingredients to a bowl and mix well to combine. Serve immediately and enjoy!
